I am in love with these cupcakes! They are so cute and soo yummy! Best of all they were super easy to make!
Ingredients for basic cupcake recipe:
225g Plain flour
225g Caster sugar
225g Softened butter or margarine
1 tbsp Baking powder
1 tbsp Vanilla essence
3 Large eggs
For the orange chocolate cupcakes add:
The rind and juice of one orange
For the pumpkin spice cupcakes add:
1tbsp Mixed spice
1/2 - 1 cup of pureed pumpkin
For the icing
Orange chocolate:
70g Softened butter
140g Icing sugar
2tbsp Coca powder
8 squares of melted dark chocolate
Orange decorative balls to decorate
Pumpkin spice:
50g Softened butter
75g Cream cheese
250g Icing sugar
1tbsp Vanilla essence
Candied pecans to decorate
